I have a few cheap knifes that cut just as good as my higher prices knifes. It's all about the sharping. The only difference is the weight of the knifes and the thickness.
My wife's balls are delicious.

The feel of the knife is important. Also, how long they hold an edge. I can put a razor edge on a plastic knife. But thats not really useful.

 

I had a set of full tang stamped Cuisinart knives for years. They were fine. They also had to be sharpened all the time, felt like crap, and would inconsistently dull. I used them for nearly 10 years, amongst a few other similar brands mixed in. Once I ditched them all got into nicer knives, I finally saw the difference. They hold an edge much longer, feel great, and don't even need a steel that often. Even amongst the nicer knives I have, I can tell a difference between the $190 Mac Santoku vs the henckels that came in the block.

 

Same with a pocket knife. Usually you get what you pay for.

 

But.... If you're happy with a cheaper set, by all means don't upgrade.

Got a pork shoulder last Friday.

 

Cut it in half and made sous vide carnitas over the weekend, then pernil (Puerto Rican style roast pork) tonight.

 

Once again confirmed that pork shoulder is my favorite cut of meat.

smoked a pork butt the other day on the egg, amazing as usual

I was 0.

 

 

 

And I'm still a zero.
