RyanGT
XLeezardx, looks good as usual... your steamed dumplings in the last pic - what's the small piece of topping? Mushroom? Red date? I also saw your pics on FB, what were the poached ducks used for? Thanks for posting the recipe/instructions for the calamari! . . I have enough drama for now..... We just had a pig at a tailgate party at the Giants game over this past weekend "Barack Obama, mothaf#%@a! Barack Obama! I'm the president...of hittin' the ass!" -this is not a political view it's merely a quote from a hilarious tv show.

Irimis
While I can't add to the better pics of the thread. I do a pig roast every year. Pretty basic stuff. Salt Garlic Oregano Goya Mojo marinade Mix the spices and garlic tog in to a paste. Cut small spots in to the pig and stuff the paste in to all areas. The size of the pig changes how much you have to make. Normally have to use 5 whole garlics with the size I get 40-50 lbs. Cover the whole pig in at least 1.5-2 bottles or the marinade. Let it sit over night. I use a Roasting Box. Normally it cooks for about 6 hours, then flip it over and cook the skin to be nice and crisp, half hour to another hour. Once this is done all I need is a large surving spoon to scrap the meet off the bones, no knifes at all. This year I took about 1/4 of the pig after it was cooked and pulled it up really fine, used some Dinosaur Barbecue and made a large amount of pulled pork. Comes out amazing and its really easy to do. After all the prep work before I cover it and ice it: (its the raw uncooked pig, not all of you might want to see it so left it as a link) SNC00020.jpg picture by Irimis - Photobucket SNC00019.jpg picture by Irimis - Photobucket
