I like to bake bread too gitty..

 

One of my favorites is the no-knead bread recipe that was in the NY Times about 2 years ago from Jim Leahy, who owns Sullivan Street Bakery

This was one of the first breads I made a few months ago ...

 

We only had one bread pan, so I made rolls out of the second half on my pizza stone.

 

Its a honey / raisin / wheat, but I added walnuts and flax seeds.

First of all i'd like to say that you look fantastic. That outfit really brings out your.... arms. Tuxedo apron, A+.... Baked goods look delicious.... Teeth look healthy... Chin strap beard, check.

 

All in all..... Pass. :lol:

Wheat Bread Recipe, the above is a variation, just throw whtever the F you want in it !

 

3 1/2 - 4 c flour

2 T sugar

2 1/2 c whole wheat flour

2 c warm water (115-120 deg)

2 pkgs. yeast

1/2 c dry milk

1 T salt

1/2 c honey

1 c warmed mashed potato

3 T butter

2 eggs

1/4 c drained spinach OPTIONAL

2 T wheat germ

2 T sesame seed

2 T poppy seed

1 c sunflower seed

 

In a large mixer bowl, combine warm potato, water, honey, butter, salt, sugar, wheat germ, spinach, and egg. Mix thoroughly. Add 1 c flour and yeast. Mix thoroughly. Add remaining flours alternating whole wheat and regular until a soft dough forms. Knead until smooth and elastic, about 5 minutes.

 

Place in a greased bowl, turning to cover the top. Cover, let rise until light and doubled, about 1 hour. punch down dough, let rest 15 minutes. divide into 2 parts and shape into a loaf.place in a greased 9x5 loaf pan. cover and let rise in a warm place until doubled, about 30 minutes.bake at 375 for 30 minutes and brush with egg wash. return to oven for about 5 minutes or until golden brown.remove from pan and cool, makes 2 loaves.

All u all ARE BAKED!! Aww, just have 'n some fun.

 

 

Anyone ever try and make sour dough from scratch??!

 

The starter is the best as it will stink up the kitchen for a week! Or more!!!

 

Anyhow, in a GLASS bowl or a big glass Iced Tea pitcher, mix evenly 2 cups of flour with 2 cups of water. Mix very well, then just sit it in a dimly lit corner with a dish towel over it for a week. Stir with a wooden spoon every other day. (I think). Room temperature is fine. It will turn all sorts of colors, but there is one bad one, and I can't remember what it is. Pink or something... Will smell really nasty the last couple of days. You will also see it separate. THIS IS NORMAL. The "water" part is what the old timer miners used to drink to get drunk. (gold rush years, that is why they were called sourdoughs!) I can't imagine that!!

 

When ready, mix it all up again into a thin like batter, find a good recipe for sourdough bread or make some sourdough pancakes! Or anything else that you may want to make.

 

BTW, You don't use all the mix. You leave some of it behind and you feed it more flour and water (even amounts again, 1 to 1!) for the next weeks cook off. This keeps the sourdough starter going and going and going, and going.
