tocinoman25 Posted July 8, 2012 Share Posted July 8, 2012 Try this one....POKE (Tuna Tartare) Take small appetizer plates and put in refrigerator Heat sautee pan or deep fryer with vegetable or peanut oil...350F while thats heating prep up the following ingredients: 1/4 pound - 1/2 pound fresh ahi tuna small bite sized cubes (med diced) 1 cucumber small dice 1-2 ripe avocado med dice cilantro rough chopped Ponzu sauce: 1/2 cup Kikkoman soy sauce 2 tbsp Mirin (sweet rice wine) 2-3 garlic gloves finely minced 1 tbsp minced ginger juice of 1 lemon or if youd like a sweeter taste use juice of 1 orange crushed red pepper flakes for those that like spice/heat (optional) wonton wrappers combine diced tuna, cucumbers, avocado, cilantro in mixing bowl drizzle ponzu sauce, cover w/ plastic wrap, and let sit in refrigerator while you prep wonton cut wonton sheets in half diagonally to make triangles and deep fry until golden brown...takes 10-15 seconds ONLY...season with salt and pepper once removed from oil... cut an orange in thin slices/wheels for garnish take a chilled plate, if you have a ring mold place in the center (approx 4oz), place 3 orange sliced in the middle and then fill ring mold with tuna mixture and fill to top pressing firmly, you may rub a dab of sesame oil on the ring to help release easily, place 5 crispy wontons on top and around the plate, add some cilantro leaves and bam! you have yourself a refreshing ahi tuna tartare to enjoy in the summer! you may twist it up and use toasted sesame seeds... lime juice basil this is a basic recipe...a recipe is just a recipe...but what you add to it...makes it your own!! ENJOY...this is one of my faves...
