I'm in culinary school, been cooking for years in the industry, but I been looking into seafood type boils and meals like this... I usually specialized in a bunch of beef and chicken dishes for awhile. I'll post up a thread of my personal chef jobs here within a week on my next gig. The Pad Thai cooking sauce is made from by slow cooked below: 1/2 cup tamarind pulp (for sour taste) 1/2 cup fish sauce (brand with a squid pic) (for salty taste) 1/2 cup palm sugar (for sweet taste) [reduce to 1/3 cup if use white or brown sugar] 1 - 2 tsp Thai chili powder (for hot degree) Shrimp or chicken slice / fried tofu / bean sprout / green onion / cooked carrot I will add bean sprout same time add noodle to get it better cooked.
