XLeezardx Posted March 19, 2010 Share Posted March 19, 2010 Every spring begining March-May, Sandbass (White Bass) make their run into the shallow creeks (where they were born) by the thousands. During this time, sandbass is the easiest to catch. I usually stock up for the season up to 200+ fish. Sandbass makes excellet panfish. (Ca chien Sa Ot) Ingridients:Sandbass or any kind of panfish (crappie, bluegill, yellow perch)Lemon GrassSaltGround Chili (Sambal Oelek)Curry PowderCooking Oil Instructions1. Cut the gills on the fish while its still alive to bleed it out. This will get most of the fishy taste out of the meat.2. Clean the fish (De-scale, Gut, Cut fins). Make 3 diagonal scored onthe sides of the fish. This will spread heat evenly and cook the fish quicker. 3. Pat fish dry then marinade in the ingredients for at least 4 hours.4. Heat up a frying pan with 1-1.5 tablespoon cooking oil to medium high5. Slowly add fish into the pan and loosely cover a lid. 3 minutes on each side.6. Turn up the heat to medium high, then pan fry each side for aditional 2 minutes with lid off for that extra crisp.7. Garnish with cilanto and Sweet and sour fish sauce (Nguc Mam Cham) : OPTIONAL8.
