The naturally aspirated 3.0 will have a smooth, exponentially growing power band. The 2.5GT will be a kick in the pants when the turbo kicks in at 3000rpm and then fades away at 5500rpm. The *ONLY* only way to compare the two is to drive them both and buy the one YOU like best. After all, you're going to be the one driving it.
enough zip ties and duct tape will fix anything.

Well here is a clip on youtube for a 3.0R spec b which is equivalent to the 3.0R. With a stock exhaust.

this actaully describes it pretty much on the money.

 

i'm quite a fan of the 6cyl boxer, it has a very smooth power delivery throughout the rpm range. but that said, the turbo 4 boxer is just fun to drive.
