tocinoman25 Posted March 27, 2012 Share Posted March 27, 2012 Cinco de Mayo is around the corner Here is a simple Queso Fondito recipe you gotta try and my version of chiles rellenos!! (Cheese Fondue) Awesome for dipping those corn tortilla chips or even warm flour tortillas 1/4 lb Chiuaua cheese (grated or cut in small dice) 1/4 lb chorizo sausage 1 yellow onion (diced) 1-2 poblano peppers (diced) 2 tbsp cream cheese (optional) pinch of cumin pinch of paprika 2 pinches chile powder Saute onions until translucent in saute or sauce pan, add poblano and cook over med heat until onions slightly browned, then add chorizo and cook all the way through...drain grease and dab with papertowel.... Next add chiuaua cheese and cream cheese on low/simmer until melted and add seasonings/spices no salt necessary since the chorizo has tons of flavor Transfer in to a dipping bowl and serve with corn tortilla chips or warm torillas and garnish with cilantro and limes for presentation....Enjoy!!! Buen provecho!! For Chile Relleno Use same dip recipe without dice poblano... to prepare poblano, get a frying pan and blanche the poblano in oil 300-325F for 2 mins, set aside and the skin will easily peel off...make a small slit and remove seeds... Tempura batter...you can buy a tempura batter and add ice cold water or make your own with all purpose flour and corn starch mixture with soda water or even you favorite beer! Coat the poblano and fry in 350-370F oil, once golden brown place on papertowel and season with salt and pepper find the slit you made and gently add the warm queso fondito inside and serve as is with some rice and refried beans...your stomach will thank you!
