RochNY91TSI
Stock rotors are fine... I know there'll be others that argue that they are the worst thing in the world, but having tracked on them and on expensive DBA rotors, the stockers work fine and are much cheaper. For pads, there are a plethora of choices. I've run stock, some off brand ceramics and Hawk HPS, carbotech panther plus (called something else now I think) and Hawk DTC 70. I like the hawk HPS for the street. The carbotechs were decent too, but dusted a lot. If you're not really racing the car and just driving some twisties, pick a pad as they probably won't heat up enough to make a difference.
Max Capacity
IMO what he said is good info. I have slotted fronts and oem rears with Bendix ceramic pads, do a lot of backroad country driving too. I have no complaints. 305,600miles 5/2012 ej257 short block, 8/2011 installed VF52 turbo, @20.8psi, 280whp, 300ftlbs. (SOLD). CHECK your oil, these cars use it.
