RuskiTrombone
One of the things I do that adds instant flavor to the meat is I poke holes in it with a knife and stuff the holes with fresh garlic. I always, always do this for when I bake a big juicy piece of meat, but I presume it would work in your case as well.
coxx
what's all this about cutting the meat? I was always taught that you want to keep it in 1 piece to avoid drying it out. If you cut it you let all the juice out & are left with a hot piece of shoe leather. "Barack Obama, mothaf#%@a! Barack Obama! I'm the president...of hittin' the ass!" -this is not a political view it's merely a quote from a hilarious tv show.
bluesuby
Just buy a good cut like NY Strip or Tenderloin. Then skip all the beating rituals. I wouldn't feed my dogs some of that stuff they try to sell.
