wow thats a huge catfish. you caught that with a live blue gill dam, i've never heard that before. i'm not a big fisherman so what do i know lol, you're the one holding the huge ass catfish lol. i've always only gone after crappie fish because my parents and relatives like eating them. been catching my limit of 50 or close to it for the past two weeks because of the spawning season. decently sized crappie too.

XLeezardX AKA "catfish slayer".

Those flathead are beautiful. Their skin color is quite green, however. I'm used to much more black. What body of water are you catching those in?

If I get on the Survivor show, I want to take XLeezardX with me!!! What's in the pan you're frying the cat fish with? Garlic? Shallots? Lemon Grass? And what's the sweet-sour soup dish that use cat fish? That dish with steam rice is a complete meal for me!

.

.

I have enough drama for now.....

Hahahaha if theres water, ill catch fish. White onions, garlic, ginger, then the second pic, I add fish sauce, and caramelized sugar. garnish with fried onions afterwards. The dish is called Ca Kho in Vietnamese. White rice is a must.

The sweet and sour dish is called Canh Chua.

Thanks.

I imagine you know how to make Bun - that's the rice vermicelli salad with grilled meats/egg rolls/grilled shrimp. Is the marinate for the grilled meats made of caramelized sugar and fish sauce? I had a disagreement over that marinate with a Vietnamese friend.

Now I remember Canh Chua - haven't had it in a while. It seems easy to make - fish sauce, sugar, pineapple, tomato, sprouts, cat fish, bak ca (sp?), right?

You are correct on caramelization and the canh chua.

Cut em into steaks eh?

Best way to eat catfish bro. What I do first is I take a knife and scape the skin until it turns white. That removes the slime completely. Cut into steaks and the skin keeps the meat intact.

Unless you batter and fry, then u fillet.
