XLeezardx
Cooked up some Vietnamese Pho this weekend. If any of you tried this, you know how good it is. The broth is so good, so beefy, its like drinking a steak. If you think the restraunts Pho is good, you have to try some of my home cooked pho. Took me 6 hours to make this. I know its long, but it was well worth it. Fed about 20 people and everything cost me $50. Here are some pics I snapped in the process. Enjoy Beef bones and Ox tails in a BIG ASS Pot. Add just enough water to cover bones. Boil for first 20 minutes to "cleanse them" http://i416.photobucket.com/albums/pp243/Leephan79/Cooking/May%20Pho/IMG_4586.jpg Drain the water and these are the bones semi cooked. http://i416.photobucket.com/albums/pp243/Leephan79/Cooking/May%20Pho/IMG_4597.jpg Prepare the herb ball. http://i416.photobucket.com/albums/pp243/Leephan79/Cooking/May%20Pho/IMG_4594.jpg http://i416.photobucket.com/albums/pp243/Leephan79/Cooking/May%20Pho/IMG_4641.jpg http://i416.photobucket.com/albums/pp243/Leephan79/Cooking/May%20Pho/IMG_4643.jpg Put water in the pot and refill it up to 3/4 and bring to a boil. Place tendons, brisket in. browl for 4 hours. http://i416.photobucket.com/albums/pp243/Leephan79/Cooking/May%20Pho/IMG_4591.jpg Cook some yellow onions and ginger over the stove http://i416.photobucket.com/albums/pp243/Leephan79/Cooking/May%20Pho/IMG_4589.jpg Blance some green onions and cook in beef fat thats extracted from the boiling beef bones. http://i416.photobucket.com/albums/pp243/Leephan79/Cooking/May%20Pho/IMG_4612.jpg http://i416.photobucket.com/albums/pp243/Leephan79/Cooking/May%20Pho/IMG_4621.jpg Prepare some cut up celantro, green onions and red onions http://i416.photobucket.com/albums/pp243/Leephan79/Cooking/May%20Pho/IMG_4590.jpg Cut off all meats and tendons from the bone. RyanGT
Thanks for posting this. I love all kinds of Vietnamese food. I will try and make this one day. I have a question : you blanch the white part of the green onions and then you cook it in the beef fat. What did you do with the cooked green onion stems then? . . I have enough drama for now..... RyanGT
Pho is probably my favorite dish of all time. It is so simple of a dish yet so delicious. I introduced Pho to my Mexican friends... they were skeptical at first but I told them that it's just like Menudo. They tried it and absolutely loved it.... with some jalapeno's and sirracha sauce, it's heavenly for them.. muy bien! I don't know how it is in other parts of the country but here in Seattle, I am starting to see more Mexicans/Hispanics at Pho restaurants. . . I have enough drama for now.....
