Orange chicken and the like

Wife loves orange chicken. I'd like to make some real good home-made for her, enough of the fast-food junk. She really likes the Panda Express kind but I've always personally thought I can do a lot better home cooked. It always seemed to me either too bland, too sweet, too dry, too mushy, always SOMETHING.

I found some recipes online, of course, but wanted to see what you people on here know and what tricks you got up your sleeve

Start with orange juice as your simmering base and add about two oranges worth of rind zest using a square toothed zester tool. brown sugar and black strap molasses for your sweetener. boil that down to a thick sauce then add your rice wine vinegar at the end of cooking.
