Brady Posted August 5, 2008 Share Posted August 5, 2008 This is stupid easy to make ... Get yourself a bell pepper, a yellow squash, and (2) roma tomatoes. Roast them on the grill at low to medium low heat ... you pretty much just want to char the skins. Once the skins were charred, I put them in a covered bowl and let them sweat while I cooked my steak. Then with a sharp knife, peel/scrape the charred skin off. If you don't get all the charring off, that's fine ... it's flavor. Then slice/chop the tomatoes, squash, and bell pepper. Mix together in a bowl. Top with fresh ground pepper. Other things you might want to do is spritz with lime juice or add cilantro (or both). Very tasty for a good summer day. Serves Two. Link to comment Share on other sites More sharing options...
