Can't remember the name. I had "cooked" tuna on my honeymoon in Tahiti. The guy cut the fish on the beach & mixed with the lemon/lime in a bucket for us. Amazing.

dvdt Posted April 2, 2008 Author Posted April 2, 2008 Pretty easy to make. Just takes a bit of time. Ceviche: 1)Two fillets of any white fish cut up into small pieces. 2)Marinate in lots of citrus juice (I used 7 lemons 2 limes) and a little salt in the fridge for about 3-4 hrs 3) Cook about a 3/4lb-1lb of shrimp and put in fridge and squeeze on some lemon juice and salt. 4) When fish is done, drain juice out and mix in shrimp, diced cilantro, green onions, tomato and a little jalapeno and garlic 5) Added some salt, pepper and lime juice and mix. Guac: Mix two ripe avocados w/ lemon/lime juice, salt, diced cilantro, green onions, tomato, and a little jalapeno and garlic.

laz Posted April 3, 2008 Posted April 3, 2008 if you are in a rush you can always dip your fis after it is cut into boiling water for a couple of seconds before you let it marinate/cook in the green lime juice. always fresh squeezed of course. we use fresh tuna for ceviche. X ---
