I tried it on some dumplings at dinner.... tasted good. tocinoman25 Posted March 25, 2012 Share Posted March 25, 2012 thats what i call the cock sauce...the chefs laugh at me when i call it that... but for real here is an awesome chicken satay recipe with a peanut sauce trust me, im a chef and you will love it.... for about 1 1/2 lb chicken thighs or tenderloins (preferred) marinade chicken in 1 tsp minced ginger 3 cloves of minced garlic 3 oz of sesame oil 2 oz soy sauce 1/2 tsp cayenne or red chili flakes if you like spicy combine ingredients and rub on chicken and let marinade for about 2-3 hours or best overnight awesome peanut sauce 6 tbsp peanut butter juice of 2 limes 4 oz coconut milk 2-3 tbsp of cock sauce depending on how spicy you like it...you can always add more or less to adjust heat... 2 tbsp brown sugar 2 tbsp soy sauce (kikkoman preferred) combine these ingredients in a sauce pan and bring to a simmer sautee chicken in stainless steel pan drizzle sesame or peanut oil in hot sautee pan, stainless is best as it will caramelize chicken, and sesame or peanut is best because it has a higher smoke point which makes for great high heat cooking without the burned/charred taste get it nice and brown and cook until done...juices are clear or temp it 165F you can skewer the chicken for a nice presentation with a small bowl of peanut sauce and garnish with lime and crushed peanuts, or even lettuce remember this is just a simple recipe and a recipe is a guideline, you can add other spices as you wish and make it your own... bon appetit!
