bsdzine Posted May 7, 2008 Share Posted May 7, 2008 I finally, for the first time ever, had Kobe (it was nigiri [w/ rice and seaweed] technically - it was also not TRUE Wagyu beef, state-side we mostly get female Wagyu bred w/ Male black angus fwiw. Real wagyu, matsusaka or mishima would be WAY beyond my price range for a meal:)). Anyways, I don't know of the different ways it is served. Mine was pretty much straight up raw, drizzled with sweet soy, then charred for a few seconds by a torch (then wrapped in seaweed w/ rice). I was kinda scared at first, super raw red meat just didn't seem that appetizing while I watched my chef prepare the meal. But after he put it in front of me, I told him I've never had this before and don't know what to expect. He graciously took my plate and cut each piece into two for me - in nice broken english he said it will be chewy, but I was eating a plate of tako (octopus) at the time, so he said it would be on par with the tako, only much more tender. He gave me the run down of the types of Kobe available, showed me the distinct 'marbling' of the meat - pretty cool stuff. For the taste: Wow. It was magic in my mouth. I haven't eaten beef in a few months (maybe even a little under a year), so I just had to try it - and god damn, was it worth it. I found it to be a little more chewy than the octopus due to the high fat content, but damn I could chew a piece for hours and still drain out the flavor into my mouth. I'm glad my chef gave me smaller pieces, they were hard to break up due to the fat - but again, the flavor was overwhelming. A little expensive, yes. But my sushi chef gave me half a plate (6 nigiri) for free as every new plate he served me we toasted some 'diamond' sake (i do not know the true name of this 'diamond' sake, but it's one of the best i've ever had - lavendar scent, very 'floral' flavor - good stuff!) Anyone else not want to eat a real steak again after eating kobe? I never thought raw red meat would be this amazing (besides the poon of course:lol:i could eat 'that meat' for breakfast, lunch and dinner:lol:). brian Link to comment Share on other sites More sharing options...
